Elderberry Syrup Recipe
1 cup dried elderberries (3 oz)or 3 cups fresh elderberries
3 cups water
chopped ginger, 1 inch or so
Optional- Astragalus root, Elderflower, cinnamon, boneset……
1-2 Tbsp Echinacea root or 1 ounce tincture
Juice of 1 lemon
1 cup honey
To make the decoction: Put berries, ginger, echinacea root, astragalus root if using, and water into a sauce pan. Bring to an almost boil and then reduce heat and simmer for 45-60 minutes, until the liquid is cooked down to about half. Take off the heat.
To make the infusion: After turning off the heat, add all the leafy herbs to the mix. You don’t want to cook aromatic herbs such as elderflower, thyme, or boneset. Let infuse for 15 min.
Strain concoction through a mesh strainer or cheese cloth. Return the liquid to the sauce pan. Heat to a low simmer and add the honey. Stir until dissolved and remove from heat to let cool.
When cool add the lemon juice and echinacea tincture if using. Bottle and refrigerate. It will stay good for up to 3 months in the fridge.
*This recipe can be modified by adding other herbs such as thyme, astragalus, boneset, cinnamon…. Dosage: take a tsp to Tbsp 1-3 x a day. Syrup can be added to hot or cold drinks, as a pancake syrup or as a topping on yogurt, ice cream, or oatmeal.
